Korean BBQ menus can feel overwhelming. These are the four cuts you need to know β everything else is variation.
Bulgogi β λΆκ³ κΈ°

Beef Belly / Wagyu Short Rib
In Dubai, samgyeopsal (pork belly) β the quintessential Korean BBQ cut β is replaced with beef belly or premium wagyu short rib at most halal restaurants. The marinated thinly-sliced bulgogi is the warm-up act. Then bring on the galbi for the main event. Never start with the premium wagyu β let your palate build.
Let the server help with premium cuts
At most Dubai Korean BBQ restaurants, a server will offer to manage the grill for premium cuts like galbi and wagyu. Accept. They know exactly when each piece is ready.
Master the ssam (lettuce wrap)
Place a piece of grilled meat in a lettuce leaf, add a tiny amount of rice, a smear of doenjang or gochujang paste, a slice of raw garlic, and a piece of kimchi. Fold and eat in one bite. This is the move.
Use scissors, not chopsticks, for cutting meat
Korean BBQ culture uses scissors to cut grilled meat on the grill. Every table has a pair. Cut galbi into bite-sized pieces while it finishes cooking. It's perfectly normal β expected, even.
Order the jjigae stew as a mid-meal reset
A bowl of sundubu-jjigae (tofu stew) or doenjang-jjigae ordered mid-meal acts as a palate cleanser and filler. At Hyu, this is mandatory. Order it.
Finish with rice in the grill drippings
Ask for a small bowl of rice at the end of the meal. Add it to the grill with the remaining drippings and any leftover kimchi β stir-fry it briefly. It's not always on the menu. Every Korean knows to ask.
