1. Coya Dubai — Restaurant Village, Four Seasons Jumeirah

Coya runs Dubai's most thoughtful pisco program. Peruvian style, made with Barsol Quebranta, fresh Key lime juice, gomme syrup, free-range egg white, double shaken without ice (dry shake) and then shaken with ice. The Angostura goes on after pouring — a clean three-dot pattern across the foam. 2. Sabores del Sur — Al Quoz

The only place in Dubai serving a properly Chilean-style Pisco Sour. 3. La Mar by Gastón Acurio — Mandarin Oriental Jumeira

4. Maiz Tacos — JLT

Cheapest legitimate Pisco Sour in Dubai. 5pm–7pm Tuesday through Thursday. The bartender (Mati, originally from Providencia in Santiago) makes a respectable Chilean-style version with Capel and lemon. Not as polished as Coya but at less than half the price. Order one with the Baja fish tacos.

The Working Chilean Pisco Sour Recipe

Per serve, makes one tall:

  • 60 ml Pisco Capel Reservado (or Alto del Carmen 35°)
  • 30 ml fresh lemon juice (no bottled)
  • 20 ml gomme syrup (or 1:1 simple syrup)
  • 1 fresh egg white
  • 3 drops Angostura bitters
  • Cubed ice

Method: Dry shake all ingredients without ice for 15 seconds (this builds the egg-white foam). Add ice. Shake hard for 12–15 seconds. Double strain into a chilled tall glass. Wait 10 seconds for the foam to settle. Drop 3 drops of Angostura across the surface in a straight line. Drink immediately.

Pro tips from the Dubai kitchen

  • Use cold pisco straight from the freezer. Pisco doesn't freeze at 40% ABV but it gets thick and cold — this helps the dry shake build foam faster.
  • If you can't find limón de Pica, use a 70:30 mix of regular lemon + lime. Closer to the Chilean profile.
  • For a foam that holds 5+ minutes, add 3–4 drops of egg-white powder (sold at Spinneys baking aisle). Sounds odd; works.
  • Skip aquafaba if you can use real egg white. Egg white gives a denser, longer-lasting foam.

Both countries have legitimate claims. The earliest documented recipe is from a Lima-based American bartender (Victor Vaughan Morris) in the 1920s, which supports the Peruvian claim. However, pisco itself is produced in both countries and Chile has its own continuous tradition. Today most international cocktail books credit Peru as origin; Chile produces and consumes far more pisco per capita. In Dubai, you can drink both styles.

Where do I buy pisco in Dubai?

MMI Dubai stocks Pisco Capel Reservado (AED 165) and Alto del Carmen 35 degrees (AED 195) for Chilean style, and Barsol Quebranta (AED 240) for Peruvian style. African + Eastern has Capel intermittently. You need a UAE liquor licence or to buy at the duty-free port shops (Bahrain Causeway, Hatta border) to take pisco home legally.

Can I make a Pisco Sour without egg white?

Yes, but it is not a true Pisco Sour. The egg white creates the dense foam that holds the Angostura bitters on the surface — without it, the bitters sink and the drink loses its visual signature. If you have an egg allergy, use 30ml of aquafaba (chickpea liquid) as a substitute. It works mechanically but doesn't have the silky texture of egg white.

What food pairs with a Chilean Pisco Sour?
