The Karama flagship and our overall #1 for chaat. Pani puri (AED 15 for six) is filled at the counter so the shell never sogs, and the pani comes in three waters — sweet, mint and a fierce spicy. Go at 6:30pm when the evening chaat rush guarantees fresh puris.

The Bur Dubai outlet of the same family, handy for Meena Bazaar shoppers. The dahi puri (AED 17) is the pick here — chilled yoghurt, tamarind and a shower of fine sev. Slightly roomier than the Karama branch, so easier for a sit-down.

The Haldiram's-style institution where chaat meets a legendary sweet counter. The aloo tikki chaat (AED 18) — crushed potato patties under yoghurt and chutney — is the order, followed by a hot jalebi from the front. Busy on weekends; the AED 60-for-two spend buys a serious spread.

What is chaat, and which types should I order first in Dubai?

Chaat is India's savoury street snack family — crisp, tangy, cooling and spicy all at once. If it's your first plate, start with pani puri (hollow shells you fill with spiced water), then sev puri (flat crisps with potato, onion and chutneys) and dahi puri (the same, drowned in cool yoghurt). Raj kachori is the heavyweight — one crisp globe stuffed with the lot. Every spot on this list does all four.
