Bandeja Paisa in Dubai: The Complete Guide to Colombia's Most Legendary Dish

One platter. Eight components. A century of Antioquia mountain tradition — now available in the heart of Dubai

What Makes Bandeja Paisa the Greatest Dish in Colombia?

The bandeja paisa is not a dish — it's an event. When it arrives at the table, conversation stops. The platter is enormous, groaning with components that represent an entire day's worth of food: slow-cooked red beans, white rice, carne molida (seasoned ground beef), chicharrón (crispy pork belly), chorizo, a fried egg, sliced avocado, sweet plantain and an arepa. Every component is made separately and to its own standard. Together, they form something that is more than the sum of its parts.

It comes from Antioquia — the mountainous, coffee-producing heart of Colombia — and was originally the food of farmers and muleteers who needed to sustain themselves through long physical days at altitude. Today it is Colombia's most recognisable dish, a point of national pride, and a measure of a Colombian restaurant's soul.

In Dubai, finding a truly great bandeja paisa is a quest worth undertaking. Here is everything you need to know — the components, the best restaurants, the price points, and the story behind the dish.

The Eight Components of a Perfect Bandeja Paisa

Each component is judged independently. A great bandeja paisa requires excellence across all eight — no weak links.

1
Frijoles Rojos (Red Beans)
Slow-cooked kidney beans with hogao (tomato-onion sauce), pork belly and cumin. A great bandeja paisa rests on its beans — they should be creamy, thick, intensely flavoured. Four hours minimum in the pot. This is the component that reveals a kitchen's commitment.
The Foundation
2
Chicharrón (Crispy Pork Belly)
Thick-cut pork belly, deep-fried until the skin bubbles and crackles. Must shatter on the first bite. Soggy chicharrón is a sign that this restaurant will disappoint. In Dubai's halal versions, beef belly or veal belly is used — done correctly, nearly as good.
The Star
3
Carne Molida (Seasoned Ground Beef)
Ground beef cooked with hogao, cumin and achiote until deeply flavoured and slightly dry. Not a wet meat sauce — distinct, textured, each grain of beef separate. Often the least glamorous component but reveals skill.
The Workhorse
4
Chorizo Antioqueño
Thin, fresh pork sausage from Antioquia — milder, less paprika-forward than Spanish chorizo, with a slight orange tint from achiote. Grilled until charred in spots. In Dubai, halal beef chorizo is substituted. Quality varies enormously.
The Accent
5
Huevo Frito (Fried Egg)
Fried in hot oil, white fully set, yolk runny. When you break the yolk over the beans and rice — that moment is when you understand the genius of the dish. Seems simple. Many restaurants undercook or overcook it.
The Binder
6
Tajadas de Plátano Maduro (Sweet Plantain)
Ripe plantain sliced diagonally and fried until caramelised and sweet. The contrast with the savoury beans and smoky chicharrón is essential. Slightly sticky, jammy, golden-dark at the edges.
The Sweetness
7
Aguacate (Avocado)
Ripe, plain, sliced — no lime, no salt added. Let it be what it is: cooling, creamy, the neutral that brings everything together. Often half a Hass avocado, simply halved or sliced. A bad restaurant gives you unripe avocado.
The Cool
8
Arepa Antioqueña
A thin, white corn arepa, slightly charred on the comal. This is the bread of the meal — used to scoop, to mop, to eat as a vehicle. Should have a faint corn smell and slight chew. Some restaurants include cheese-stuffed arepas.

Where to Find the Best Bandeja Paisa in Dubai

🥇 BEST IN DUBAI Score: 9.4/10
El Rincón Colombiano bandeja paisa Dubai

El Rincón Colombiano — Al Karama

AED 95 for full bandeja · Serves 1 (can share)

The benchmark. Their bandeja paisa is made in the Medellín tradition — beans cooked from 7am for the lunch service, chicharrón fried fresh in batches. The carne molida has a distinct smoky depth from the hogao. Their chorizo (halal beef) is genuinely excellent. The entire platter arrives at a specific temperature — warm components hot, cold components cool. This is a restaurant that understands the architecture of the dish.

Beans: Exceptional
Chicharrón: Outstanding
Chorizo: Very Good
Egg: Perfect runny yolk
Reservation tip: Call by Thursday for weekend lunch. Weekday lunches: walk-in fine before 1pm. Order the bandeja completa — don't let them offer you a smaller version.
🥈 EXCELLENT Score: 8.8/10
La Fogata Colombiana bandeja paisa

La Fogata Colombiana — Business Bay

AED 110 for full bandeja · Weekend lunch special

More polished, slightly more expensive, and the grilled elements are exceptional — their chicharrón has more smoke from the open grill. The beans are slightly less creamy than El Rincón but still excellent. A great option if you want the full bandeja experience in a more restaurant-atmosphere setting.

💚 BEST VALUE Score: 8.2/10
Paisa Kitchen Deira bandeja paisa value

Paisa Kitchen — Deira

AED 60–70 for full bandeja · Best lunch deal in Dubai

Smaller platter, but every component is made correctly and the price is exceptional. The beans here are very good — made to the right consistency. A slightly reduced chicharrón portion but properly fried. The best bandeja paisa for those on a budget and genuinely excellent even without comparing to price.

How to Eat Bandeja Paisa — The Colombian Way

There's no strict protocol, but Colombians have an approach that maximises the pleasure of the dish. Follow it.

1
Start with the beans. Take a spoonful of the frijoles alone first. This tells you everything about the kitchen. If the beans are right, you're in good hands.
2
Break the egg yolk immediately. Let it run over the rice and beans. This is the moment the dish becomes a cohesive whole rather than eight separate items.
3
Eat the chicharrón when it's hottest. The crunch begins deteriorating immediately. Don't let it sit.
4
Use the arepa to eat, not as a side. Break off a piece and use it as a scoop for beans and rice. That's what it's there for.
5
Add ají (chilli sauce) sparingly. It should accent, not overwhelm. The colombian ají is fresh and bright — a dot on the chicharrón, a drop on the beans.

Bandeja Paisa FAQ

Can one person eat an entire bandeja paisa?
A full bandeja paisa is designed as a single-person meal — but it is a large one. Most first-timers share between two people, which is completely acceptable. Colombians who grew up with the dish tend to eat the whole thing, often with nothing else for the rest of the day.
Is bandeja paisa available at halal restaurants in Dubai?
Yes — all Colombian restaurants in Dubai serve halal versions. Traditional pork chicharrón is replaced with beef or veal belly, and chorizo is beef-based. The dish retains its essential character. Most have been perfecting the halal version for years and it is genuinely excellent.
What time should I order bandeja paisa?
Lunch — ideally between 12:30pm and 2pm. Bandeja paisa is a lunch dish in Colombia. The beans have been cooking since morning and the kitchen is at its most focused. Ordering at dinner is fine but you may find some components slightly less vibrant.
What should I drink with bandeja paisa?
Aguapanela (hot unrefined cane sugar water) is the traditional accompaniment in Colombia. Colombians also drink fresh juice — lulo, guanábana or mora (blackberry). In Dubai, a fresh mango or passion fruit juice works beautifully. Strong black Colombian coffee at the end.
