Afghan kebab culture is one of the oldest and most distinct in the world. Unlike the marinated, spiced grills of Lebanon or the heavily seasoned kebabs of Pakistan, Afghani kebab is about the purity of the meat โ exceptional lamb, minimal seasoning, maximum fire. Chapli Kabab, Seekh, Shinwari lamb chops โ these are dishes where the quality of what you're cooking is the whole story. Dubai's Afghan restaurant scene takes this seriously. Here's where to eat it.
Afghan Kebab Culture: What Makes It Different
Afghanistan sits at a culinary crossroads between Central Asia, Persia, and the Indian subcontinent โ and its kebab tradition reflects all three. But what sets Afghani kebab apart is the Shinwari philosophy: the Shinwari tribe, a Pashtun people from the Khyber Pass region, believe that truly great lamb needs almost no enhancement. A simple marinade of salt, oil, and perhaps a little garlic. Then charcoal โ real charcoal, not gas โ and a cook who knows when to move the meat.
The three pillars of Afghani kebab in Dubai are: Chapli Kabab (the flat spiced patty, associated with Peshawar and the frontier), Seekh Kabab (minced meat on skewers, grilled vertical), and Shinwari lamb cuts (ribs, chops, and leg pieces cooked Shinwari-style). Each has its own devotees and its own best restaurant in Dubai.
The Afghan Kebab Glossary
Every Afghan Kebab Type You'll Find in Dubai
Chapli Kabab
Flat minced lamb or beef patties mixed with coriander, tomato, green chilli, and spices. Shallow-fried in a tawa until crispy outside, juicy inside. The Pashtun classic.
Seekh Kabab
Long minced meat kebabs moulded onto flat skewers, charcoal-grilled vertical. A little more spiced than Chapli, served with naan and chutneys.
Tikka Kabab
Cubed lamb or chicken marinated simply and grilled on skewers. Less spiced than the Indian/Pakistani version โ more about the quality of the lamb.
Shinwari Lamb Chops
The crown jewel of Wakha's menu. Whole lamb ribs or chops cooked in their own fat in a large karahi, then finished over live fire. Primal, incredible.
Chopan Kabab
Whole rack of lamb ribs, marinated and grilled over charcoal. A celebration kebab โ usually ordered when a group wants to share something spectacular.
Karahi Gosht (Shinwari)
Not technically a kebab, but essential to the Shinwari table โ lamb cooked in oil and minimal spices in a blackened iron wok (karahi) until the fat renders and the meat becomes extraordinary.
Where to Eat the Best Afghani Kebab in Dubai
Wakha โ Al Barsha
For Shinwari-style cooking, Wakha is in a category of its own in Dubai. You come here for the lamb โ you choose your cut from the counter at the front, and the kitchen does the rest. The lamb chops arrive in a blackened iron karahi, swimming in their own fat, with a freshness and intensity of flavour that you rarely encounter. The Seekh Kabab here is also exceptional: properly minced, grilled to order, juicy throughout. Three branches, but Al Barsha remains the original and the best.
Sthan โ Karama
Sthan is technically an Afghan-Pakistani-Indian restaurant, but it's here because of one thing: the Chapli Kabab. It's one of the best in Dubai โ large, generously spiced (the fresh coriander and green chilli are visible throughout), crispy on the outside and extraordinarily juicy within. At AED 42 for two patties with rice, salad, and naan, it's a remarkable deal. Sthan is everything a Karama canteen should be: homely, welcoming, and quietly exceptional.
Afghan Khorasan Kabab โ Al Quoz
Opposite the Dubai Bowling Centre in Al Quoz, this small, easy-to-miss restaurant is one of those genuine discoveries that makes Dubai's dining scene so rewarding. The kitchen is tiny, the menu is short, and the Tikka Kabab and Shinwari specials are extraordinary. This is where Dubai's Afghan community comes when they don't want theatre โ just perfect charcoal-grilled lamb and fresh naan in a humble setting. Come with local knowledge and an appetite.
Al Kabab Al Afghani โ Multiple Locations
When you just need a great Afghan kebab and you don't want to cross the city, Al Kabab Al Afghani has you covered from Deira to Al Barsha to Silicon Oasis. In operation since 2004, this is the city's most accessible Afghan kebab institution. The Chapli Kabab is the must-order; the Seekh Kabab is reliable and well-priced. Not the most nuanced Afghan cooking in Dubai, but consistently good and exceptional value.
