True Hyderabadi biryani is a dum dish: marinated meat and par-cooked rice are layered, sealed under a dough lid, and slow-steamed so the meat cooks in the rice's steam. Kacchi goes further — raw meat and rice cook together in the one sealed pot. Dum Pukht and City of Joy do this properly. The Karachi, Sindhi and Lahori plates that dominate Karama are cooked pakki style (meat pre-cooked, then layered), spicier and oilier.
