Status update: Dinner by Heston Blumenthal at Atlantis The Royal was placed on temporary pause in April 2026 as part of Atlantis's portfolio review. The venue is closed at the time of writing. Reopening timeline has not been announced. The pause is one of seven announced (Cloud 22, Ling Ling, La Mar, Ossiano at Atlantis Palm, Hakkasan at Atlantis Palm, Brasserie Frantzén at Atlantis Palm, and Dinner).
Notably, TimeOut Dubai named Dinner the Winner Best European 2026 — meaning it earned the award shortly before being paused. That makes the closure all the more interesting and we expect the property to bring it back in some form.
We've eaten at Dinner four times across 2024–26 (the most recent visit two months before the pause). This review covers what made the concept strong and what to expect on return.
The Setting: Heston-Atlantis Theatre
When operating, Dinner occupied a 120-seat room with floor-to-ceiling windows facing the Atlantis Royal lagoon. The signature visual hook was the open kitchen with a giant rotating spit-roaster — direct reference to the Royal Hospital recipes the menu pulls from. The aesthetic was dark wood, brass fittings, and historical-dining theatricality.
The pre-pause kitchen was led by a senior chef from Heston's Mandarin Oriental Hyde Park original, with menu development guided directly by Heston's London team. Service was paced for a 2.5-hour formal meal.
The Food: Historical British, Modernist Execution
Dinner's brief was always specific — every dish on the menu was rooted in a real historical British recipe (1390–1850), reconstructed with modern technique. The signature dishes — meat fruit, Hereford ribeye, ash-baked celeriac, Dessert circa 1810 — translated directly from the London original.

Meat Fruit (c.1500)
Heston's most-photographed dish ever. A small mandarin-shaped sphere of chicken liver and foie gras parfait, glazed orange, served with grilled sourdough. Looks identical to a piece of fruit. Tastes nothing like it. The dish that built the London Dinner reputation.
Hereford Ribeye, Marrow Sauce
Hereford-cross beef from accredited UK farms, dry-aged 35 days, grilled with marrow on the side. The bone marrow is then deglazed and the resulting sauce served alongside. Pure 18th-century cooking method, executed with discipline.
Dessert Circa 1810
An ice-creamy reconstruction of an 1810 British dessert — burnt cream, candied citrus, Madeira — served in a decorative crystal coupe. Tasting-menu-quality dessert at à la carte service.

The Verdict
Dinner by Heston Dubai was, when operating, one of the four-or-five most-decorated restaurants in the city — defending British-modernist territory that no other Dubai venue claims. TimeOut's Best European 2026 award was earned. The April 2026 pause was a surprise; we expect it back in some form.
