What is Biltong — and Why Is It Different from Beef Jerky?
The process: Biltong is made by curing whole cuts of beef (or game meat) in a mixture of salt, brown vinegar, coriander seed, black pepper and optional spices, then hanging the cured strips to air-dry for 5–7 days in a cool, well-ventilated environment. No smoking, no cooking, no dehydrator — pure air-drying in the traditional method. In Dubai's climate, producers use air-conditioned biltong boxes or controlled rooms to replicate the cool, dry conditions of the South African highveld where the tradition developed.
How it differs from jerky: American beef jerky is thin-sliced, heavily marinated, and dried at high temperatures — producing a leathery, chewy, often sweet product. Biltong is thicker (typically 2–4cm per strip), air-dried rather than cooked, and has a complex tanginess from the vinegar cure alongside the warm earthiness of ground coriander. The interior of good biltong should be slightly moist and red-pink — not bone dry. The fat should be soft and creamy rather than hard and white.
Droëwors: The sausage equivalent — boerewors (the traditional Southern African coil sausage) dried using the same air-drying method as biltong. Thin, snappy, intensely spiced with coriander and cloves. As addictive as biltong itself and slightly easier to produce, making it a favourite of Dubai home producers.
Halal in Dubai: All commercial biltong producers in Dubai use halal-certified beef. Community producers should be asked directly. Traditionally biltong was made from any beef cut — rump, silverside, or topside are most common, with ribeye biltong available as a premium product.

Prices are typically AED 40–60 per 100g.

Producers with consistent positive reviews and a waiting list are generally the most trustworthy. Ask specifically about the beef source, halal status, and drying method before ordering.
Southern African community braai markets in Dubai — typically at JBR, Zabeel Park or community club venues — feature multiple biltong producers competing side by side.
