How to Eat Nyama Choma: The Proper Way

Any serious nyama choma spot will bring a finger bowl or direct you to a sink before the meat arrives. Use it. You will be eating with your right hand.

Tear ugali with your right hand

Take a piece of ugali (roughly the size of a golf ball), roll it between your palm and fingers until it becomes smooth, then press your thumb into the centre to create a cup. This is your eating vessel.

Pick up a piece of nyama choma with your ugali cup and eat them together. The maize absorbs the meat juices and the combination is greater than either element alone.
